The funayuki knife originated as an all-around blade used mainly on fishing boats. Nowadays the name is given to various types or designs depending on the knife maker. However a few commonalities exist between the various makes. Mainly, the blade has a fairly flat profile and shorter overall length. Many times the profile is applied to standards like gyuto or chef knives.
The short length and flat profile make this a perfect blade for most small cutting tasks and delicate work on garnishes. It is also a good choice for breaking down or filleting fish and other small proteins.
The Yamashin White #1 funayuki is a short all-purpose knife made from White #1 carbon steel. It features a nice rugged looking kurouchi finish which goes a long way in protecting the carbon blade from rust and corrosion. The profile is ground evenly on both sides so it will be good for both left- and right-handed users. The edge is really quite good right out of the box, especially given its very economical price. Of course, White #1 will sharpen up easily so a touch up on your favorite high grit stone will result in a super sharp and agile jack of all trades cutting machine.
The walnut and pakka wood handle is a nice addition to this great little blade, and a real treat at such a great price point. Highly recommended as an introduction to Japanese knives.
